One of the greatest things about Easter is getting to make all of the Easter crafts that go along with the season. From dying and painting eggs, to making Easter baskets, to making construction paper flowers, ducks and other springy animals – this is just such a fun time of year for crafty things!

One of Examiner.com’s regular contributors, Sharon Damon, recently wrote about 5 Edible Easter Crafts to do with your kids. I absolutely loved this article because it combined two of my favorite things – Easter sweets and crafts!

Here is my favorite recipe from Sharon’s article, which actually gives two amazing variations of these yummy cupcakes – Easter Basket or Easter Bunny. To see all five of Sharon’s Edible Crafts for Kids click here.

Ingredients/Materials:

Cake mix

Canned icing/frosting

Food coloring

Mini M&M’s, jelly beans, miniature and regular marshmallows, white and “green” coconut, chenille stems, pink colored sugar (or color your own with pink food coloring and sugar, dried on wax paper)

Instructions:

For Easter Basket Cupcakes: Prepare cake mix as cupcakes (on box) using decorative cupcake liners. Remove from pans when baked. Let cool. Frost with white icing. Sprinkle with green colored coconut. Cut chenille stem in half, bend and press into cupcakes as a “handle.” Place jelly beans, sour eggs, mini M&M’s or any other favorite candy inside as “basket fillers. Tie a bow around the handle and you have perfect little “Easter basket cupcakes”

For Easter Bunny Cupcakes (shown at top): Prepare cupcakes as above. Frost with white icing. Shake on shredded coconut. Use 2 blue M&M’s for eyes, a tiny dollop of pink-tinted frosting for a nose, 2 mini marshmallows for cheeks. Cut a regular marshmallow in half and shape into two “ear” shapes (slightly pointed on the ends). Sprinkle pink sugar onto the cut parts of the marshmallow ear (so it sticks) and secure on the frosting above the eyes. If you like, you can make whiskers with stripes of pink frosting or you can use bits of red sour sticks.

I recently spent a few days in San Francisco, where cupcake shops are all the rage. In NYC we have Magnolia Bakery, Buttercup, Crumbs, etc… My favorite is the S’mores cupcake from Magnolia, heaven! Suffice to say, I’m a sucker for a good lookin’ cupcake.

There’s been a slight shift in the party scene in favor of cupcake lovers – in addition to a cake, there are cupcakes. Event planners are using this transition to their advantage, because cupcake towers can be absolutely breathtaking.

For a cupcake stand, Kim at TomKatStudios found a great deal at Michael’s for $20. She decorates it with colorful paper circles that match the theme. If you’re just starting out, Kim recommends using the Cupcake Kit.

Cupcake toppers come in all shapes and sizes. Sprinkles, lollipops, gummy bears, M&Ms – if you dream it, it can be a cupcake topper.

All this talk of cupcakes is making me hungry… I’m off to do some baking!
